That all depends on your choice of hot dog brand.

It's the lips, eye balls and a holes that gives them all the flavor.

I always wondered why they save the ears for dog treats?

I've been on the floor of many abattoirs and small scale processors (kosher and conventional), and have been a part of our on the farm butchering when we made blood sausage and liver sausage- old school German style. I've also had university courses in meat/food science. Seeing how food is made never once lessened my appetite for all kinds of meat and products-how it tastes ins a factor though. Some of the best hot-dogs I always buy is Member's Mark from Sams- they are big and have a good 'snap' in their casing.

Braunschweiger with spicy mustard on a saltine cracker. That's some good eats right there.

Lips and a$$holes. The rest of the cow, pig, roadkill, etc., is used for other cuts.
