Anyone have recommendations for the size lithium battery to run 3 Garmin echomap units 2x 126sv, 1x 106sv, and 1x gls 10 live scope box. Is the 100ah battery large enough to fish all day with these units?

Depends on other things also : is nmea also on it , is there a gms10 port expander on it , is there large enough wire not to cause voltage drop , is it a quality lifpo4 bat .
But you probably draw about 8 amps an hr maybe a little less maybe a little more , so in 10 hrs thats 80amp hrs
So Yes your probably good w/ 100AH

Per Amped Outdoors draw chart your pulling about 9.5 amps per hour with your setup.
A 100ah battery should last you 10.25 hours.

This video has a spreadsheet that goes along with it, that will help you determine what size battery you need for your specific electronic set up.

That chart uses the Garmin specs amp draw at 12v
Amped outdoors also has had a chart forever that is more relevant to lithium at higher voltage which draws less amps
How to calculate total amp draw! – Amped Outdoors
Watch the first video on this page to get an idea about amp draw with different voltages
This chart shows a 102-106 old ultras draws 2.17amps , and two 122-126 old ultra`s draws 2.5 amps each and a gls10 draws .75 amps adds up to 7.92 per hr
Depending on things like if you run the backlight on max ... thing may differ slightly
I run a two old ultra 106`s , one uhd2 93sv (higher amp usage than a uhd 93sv) , a uhd73sv and two gls10`s ,with a heading sensor on NMEA and a Gms10 port expander all on two 50amp hr Ionics in parallel and the bluetooth says its just under 8 amps

Thanks for taking time and giving me this info. Went ahead and of killed It and purchased a 140ah. currently I have dedicated 10 gauge wire for every unit. Hope I don't need to upsize to 8. will leave my nmea on starting battery.

Smart move on the 140 and 10ga to each unit will be fine.
